Mussels with Chorizo
Serves 6
4 bags mussels
2 chorizo links
2 shallots, chopped
4 garlic cloves, minced
2 cups halved cherry tomatoes
1 tsp red pepper flakes
3 cups dry white wine
Olive oil
Heat the olive oil. Add the shallots and cook 3 min.
Add the garlic and chorizo. Cooks another 3 min.
Add the cherry tomatoes. Cook 3 min.
Add the white wine and bring to boil. Cook a few minutes until reduced.
Add the mussels and cover.
Cook, stirring until they are all open.
Serve over pasta or on its own. You will need bread for the sauce!!!!
