Flaky Pie Crust
Makes 1 crust
1 1/4 cup all purpose flour
1/4 tsp salt
5 Tbsp butter, chilled and cut into pieces
1/4 cup vegetable shortening
2 Tbsp cold water
Whisk the flour and salt in a medium bowl.
Add the butter and shortening and rub with your fingertips until mixture resembles coarse meal. Sprinkle with water and mix with your hands, being careful not to overwork the dough.
Gather the dough into a ball and flatten into a disk.
Wrap in plastic wrap and chill at least one hour.
You can make it ahead and freeze.
